Chicken Slow Cooker Meals for Your Freezer

It’s time for back to school, which means days get shorter and filled with more running around. Back to school time also means fall is just around the corner! Although we use our slow cooker all year, I know many use it more during the fall and winter. Here are a few of our favorite chicken dishes that are meant to go from the freezer to your slow cooker.

I love meals that I can prep, freeze, and dump right into the slow cooker. I spend the day chasing around two little boys and dinner sometimes slips my mind. With these meals stocked in our freezer, I can pull one out and put it in the slow cooker without thinking about dinner the rest of the day!

Freezer Chicken Meals for Slow Cooker

Chicken Cacciatore

Ingredients:

  • 1 lb chicken breasts
  • 1 jar of chunky vegetable-style pasta sauce
  • 1 zucchini, chopped
  • 1 green pepper, chopped
  • 1 sweet onion, chopped

Directions:

  1. Put all ingredients in a freezer bag and mix together.
  2. When ready to eat, remove from freezer and thaw a couple hours.
  3. Cook on LOW 6-8 hours.
  4. Serve with cooked spaghetti noodles, salad and garlic bread.

 

Cilantro Lime Chicken with Corn and Black Beans

Ingredients:

  • 1.5 lbs chicken breasts
  • 1 (16 oz) bag frozen corn
  • about 3 T lime juice
  • 1 bunch fresh cilantro, chopped
  • 2 minced garlic cloves
  • 1/2 red onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin

Directions:

  1. Put all ingredients in freezer bag and mix together.
  2. When ready to eat, allow to thaw a few hours.
  3. Cook on LOW 8 hours.
  4. Serve with tortillas and toppings of your choice: lettuce, sour cream, salsa, and cheese.

 

Creamy Salsa Chicken

Ingredients:

  • 1 lb chicken breasts
  • 1 (16 oz) jar chunky salsa
  • 1 (10.75 oz) cream of mushroom or chicken soup

Directions:

  1. Mix salsa and soup together in freezer bag.
  2. Add chicken breasts and mix to coat.
  3. When ready to eat, remove from freezer and thaw a few hours.
  4. Cook on LOW 6 hours.
  5. When finished cooking, shred chicken and serve over rice, with tortilla chips, in taco shells, on a salad, on buns, use your imagination. It’s a yummy mix and can be used so many ways.
  6. Top with cheese, sour cream, avocado, lettuce, tomato, or hot sauce.

 

Chicken Teriyaki

Ingredients:

  • 4 chicken breasts
  • small bag of baby carrots
  • 2 (20 oz) cans of pineapple (whatever kind you have works), undrained
  • 4 garlic cloves, chopped
  • 1 medium red onion, cut into chunks
  • 1 cup Teriyaki Sauce

Directions:

  1. Add all ingredients to freezer bag.
  2. Allow to thaw a few hours.
  3. Cook on LOW 6-7 hours.
  4. Serve over rice.

 

Creamy Italian Chicken

Ingredients:

  • 1.5 lbs chicken
  • 1 Can Cream of Chicken Soup
  • 1 Package Cream Cheese, cubed
  • 1 Package Zesty Italian Dry Dressing Mix

Directions:

  1. Add all ingredients to bag and mix to coat.
  2. When ready to eat, allow to thaw slightly.
  3. Cook on LOW 4-5 hours.
  4. Serve over rice or noodles.

 

Applesauce BBQ Chicken

Ingredients:

  • 4 chicken breasts
  • 1/2 t ground pepper
  • 3/4 cup chunky applesauce
  • 3/4 cup BBQ sauce
  • 2 T brown sugar
  • 1 t chili powder

Directions:

  1. Place all ingredients in freezer bag and mix around.
  2. When ready to eat, allow to thaw a few hours.
  3. Cook on LOW 6-8 hours.

If you’re running late and forgot to pull your bag out ahead of time, no worries! It will be fine to toss in completely frozen, but it will probably take a bit longer. For easy clean-up, we like to use slow cooker liners. For all of these dump type meals, you’ll need gallon freezer bags or we use our FoodSaver. I’ll be adding more pictures in the next time I make each dish, but I wanted to get a head start and share with you!
